Ingredients Required for Vegetable Mixture Recipe (Pariba Ghanta)

  • Ada (Ginger) – 2 inch
  • Aalu (Potato) – 4 medium size
  • Bilati Baigana (Tomatoes) – 2 medium size
  • Charmagaj (Melon seeds) or Kaju (Cashew nuts) -2tbsp
  • Dhania patra (Coriander leaves)
  • Gajar (Carrot) – 2 medium size
  • Jeera (Cumin) – 2 tbsp
  • Lanka gunda (Chili powder) -1tbsp
  • Luna (Salt) – to taste
  • Matara (Green Pea) – 250gm
  • Pancha phutana (Cumin seeds, Mustard seeds, Fenugreek seeds, Black cumin)
  • Phula kobi (Cauliflower) – 1 medium size
  • Piaja (Onion) – 2 medium size
  • Rasuna (Garlic) – 5 cloves
  • Refine Tela (Refine Oil)
  • Beat (Turnip) – 1 medium

Procedure to Make Vegetable Mixture Recipe (Pariba Ghanta)

  1. Begin by chopping all the vegetables, including the medium-sized cauliflower, carrot, turnip, potatoes, and tomatoes, into small pieces.
  2. Next, chop the onions into small pieces as well.
  3. Make a paste using garlic and ginger.
  4. Make a separate paste using Charmagaj or Kaju and Jeera.
  5. Heat oil in a pan on the stove.
  6. Add the vegetable pieces to the pan and fry them.
  7. Once fried, remove the vegetables from the pan and heat up more oil.
  8. Add pancha phutana to the oil and fry.
  9. Add the chopped onion pieces to the oil and fry until well cooked.
  10. Mix in the garlic and ginger paste and continue frying.
  11. Add the fried vegetables to the mixture and stir.
  12. Add salt to taste and mix well.
  13. After 5 minutes, add the Charmagaj or Kaju and Jeera paste and 1 cup of water. Cover the pan and let it cook for 10 minutes until the vegetables are boiled.
  14. Decorate with coriander leaves or Dhania Patra and serve.
  15. This dish tastes great with rice, chapati, or roti.
