Mati handi Mutton is one of the hot favorites dishes of Odisha people. Mati handi mutton marinated with seasonings and steamed in an earthen pot (‘mati handi’) for an hour on a traditional dwelling, till it is cooked.
The Mutton after cooking acquires a deep brownish shade while maintaining the individual smells of the spices added. Here we bring you the complete steps of making Mati handi mansa or Mutton. A tasty dish indeed!
Ingredients for Mati Handi Mutton
- Mutton
- Potato
- Dry Chilli (Sukhi mirch/ Sukhila lanka)
- Turmeric powder (Haldi powder/Haladi Gunda)
- Chilli powder (Lal mirch powder/Lanka Gunda)
- Mustard Oil Sarson ka tel/ Sorisha Tela)
- Salt to taste (Namak/ luna)
- Ginger (Adrakh /Ada)
- Garlic cloves (Lehsun/Rasuna)
- Onion (Pyaj/Piaja)
- Bay leaf (Tej patta/ Teja patra)
Method for cooking Mati Handi Mutton
- Garnish the mutton with turmeric powder, salt, and a little mustard oil. Mix it well and leave it aside for 20 minutes.
- Make a paste of onion garlic and ginger by using a mixer or grinder and keep this aside.
- To make Garam masala, take some Dalchini, Elaichi, Loung, and Gol mirch and dry fry them a little. Then make a rough kind of powder of it, using a grinder or any other device, and keep this aside.
- Now take the Mati Handi, and put it on the stove. After the pot gets hot then put some mustard oil, Add Jeera, Tej Patta, and dry chilies and mix it for a minute.
- Then add the sliced onion, Once the onion becomes golden brown, add the paste of onion, garlic, and ginger and sauté further. Stir well.
- Now add a little turmeric powder and chili powder. And they put the garnished mutton into the pot and stir well. Also ad the potato pieces and sauté for a while. Add salt to taste.
- Add a little amount of water to it to allow it to boil and get cooked. In 'Mati Handi Mutton' it is important to let it be boiled for a long time, maybe for about one hour, depending upon the quality of your mutton.
- Cover the lid and leave it on the stove to get cooked well. In between take out the lid a few times and stir a little. At this stage, you can add the Garam Masala powder.
- Now your ‘Mati Handi Mutton’ is ready. Serve it with rice or chapatti.
