Ras Malai Odia Style Sweet Dish

Ras Malai is one of the very tasty and juicy sweet recipes and many Indians are loved this. This dish is prepared in Odia style and prepared by Miss Lizy Jena, One of our readers. This dish is very tasty and you can also eat anytime.

Ras Malai Odia Style Sweet Dish

Ingredients for making Methi Leaf Rice:

  • Cheese Curds (Paneer) Should be made from 1 liter of milk 
  • Cardamom powder 1 tsp
  • Milk 1 ltr 
  • Water 4 cups
  • Sugar 1/2 cup 
  • Almonds or Pistachios 1/2 cup thinly sliced almonds or pistachios

Steps to making Methi Leaf Rice:

  1. Knead the Paneer or Cheese Curds properly. 
  2. Mix the water and 1 cup of sugar in a pan and boil till all the sugar is dissolved. 
  3. Then make small balls with this Paneer(Cheese Curds). 
  4. Make a sugar syrup using water and sugar. and it should be the ratio is 4:1. So for every 1 cup of sugar we add 4 cups of water.
  5. Put those paneer balls into the sugar syrup. 
  6. Cook for 10 minutes on high flame then keep it for 5 minutes on medium flame. 
  7. In another pan boil the 1-liter milk for 35 min (Till milk color changes to yellow), add the 1/2 cup of sugar and add the cardamom powder and mix it well. 
  8. Then Add these syrup-soaked Paneer balls (after draining) to the milk and keep it for cold for a few hours. 
  9. Then garnish it with almonds or pistachios.

Some Suggestion to make Methi Leaf Rice:


  • The milk should be warm when you add the ras malai balls to it. So the balls should cool down to room temperature but the milk should be warm.
  • Use a wide pan to cook the ras malai balls. The balls double in size so there should be enough space in the pan for them to cook. Any curry is good to serve with this dish.
  • The water to sugar ratio is 4:1. So for every 1 cup of sugar, we add 4 cups of water. This ratio is important to get the right syrup consistency.
