Odia Bengali Dahi Baingan Recipe - Prepare in few Minutes

As per Wikipedia, Dahi baigana is an Odia dish prepared from dahi and eggplant especially during festivals. This dish can be prepared without using onion and garlic when they are not allowed in some auspicious festivals. Dahi baingan recipe is one such variation from the Odia or Bengali cuisine prepared with curd as its base for the curry.

Required Ingredients for Dahi Baingan 

  1. Brinjals 6-8 long
  2. Salt to taste
  3. Refine Oil or Olive Oil
  4. Curd
  5. Mustard - OPTIONAL
  6. Curry Leaves
  7. Garlic paste
  8. Chili powder
  9. Turmeric Powder
  10. Cumin Seeds Powder

How to make Dahi Baingan 

Step 1: Wash and cut brinjals into little thin pieces and keep them in water till further use. After some minutes mix Chilli powder, Turmeric Powder, and salt together with Brinjals.

Step 2: Heat sufficient olive oil or Refine oil in a Kadai (wok). Drain, pat dry, and deep-fry brinjals till light brown. Drain and place on an absorbent paper.

Step 3: Take a big pan and put Curd (Dahi) in it and mix some water as needed. Them mix some Chilli powder, Cumin Seeds Powder and salt

Step 4: Now Put all Fried Brinjal in Curd Mixture and wait for some minutes. Then serve with Rice or Roti.
